Essential Functions & Physical Requirements In charge of the wine cellar of both outlets (400 references) To create a seamless journey & outstanding wine experience for guests Prepare a comprehensive mise-en place Polish glassware, ice buckets and cocktail trays to ensure the highest standards of presentation Provide knowledgeable advise to guests on wine selection in a professional and friendly manner, and serve all drinks with accuracy and attention to detail Take orders for cocktails, aperitifs, spirits, wines, liquors and soft drinks, attending to guest needs. Actively up sell beverages to guests by imparting your knowledge of wines and beverages in regards to matching with their dish choice Identify when and why decanting of wines is required and perform decanting of bottles of wine or port in front of the guest in a professional and careful manner Check wine sales on all relevant client bills to ensure to ensure accuracy of bills and money Qualifications and Desirables Excellent level of the English language Service experience within a AA restaurant Previous experience in a similar position is required Michelin background restaurant would be an advantage Food knowledge is a must
